30 Minute White Bean Soup

Getting up the other morning I decided I really wanted to take some soup for lunch. Thirty minutes later (shower included) I had a soup that every one raved over. You could easily make this without meat, but as I had a little ham and bacon around, I added them in.

2 slices of bacon (chopped)
1 cup onions (chopped)
1 cup celery (chopped)
1 cup carrot (chopped)
1 tbsp vegetable oil
1 can white beans (Great Northern or Navy)
1 qt chicken stock
1 slice of ham

Saute bacon
add 1 tbsp oil
Add vegetables and saute for 5 minutes
Add beans
Add ham
simmer twenty minutes
puree lightly with hand blender

Notes:

Since we don’t eat bacon all that often, I it frozen in two strip bunches for cooking. It chops fine, and is alway there when I need it. All the vegetables in this soup were chopped to about 1/4 inch, smaller than I usually chop things, but the beans are the focus and larger pieces would interfere with that.

Kaylen, one of my friends who’ve been testing my soups recently, got inspired to make some herself, and re-soup-rocated by giving me some of the result. I only got a small taste, but it was pretty terrific. Not surprising, since it was made with great stuff; sweet potatoes, chicken breast, cumin, cilantro, chopped chipotle peppers, and all the usual suspects (onion, celery, chicken stock, etc.).

I’m sure I would have enjoyed all of it, but my gal immediately laid claim and took it off to work for lunch. Reports from the field were highly favorable, and I suspect she’ll be making it up to/for me soon…

Corn and Crab Chowder

This Sunday’s soup: Corn and Crab Chowder. The nice thing about this one is that it’s fast, as well as tasty.

All in all, this came out pretty well…but I didn’t get it as creamy as I’d like, and using canned crabmeat just isn’t worth it. Not that it kept us from going back for seconds (or thirds), but it didn’t live up to my hopes. I’ll have to try again when I can get some fresh, or even frozen crab. That, and I’ll increase the amount of half and half, decrease the stock, and actually use all the flour I put in the recipe. Continue reading

A Christmas List For Ernest (and why not?)

The CIA New Book of Soups

Not that I need any presents, but for anyone who really wants to get me something, here are some ideas. Note: used stuff is better than new stuff, for books, anyway. I’ve always been into soup, but this year I started cooking a soup a week and sharing it. I’m thinking about continuing that into the new year.

Really, I’d be happy if folks sent an eCard, or paper card, or called, or thought nice thoughts.

Italian Sausage and Fennel Soup

I was sitting in Whole Foods munching on a sausage and peppers sandwich I’d made up from the unholy union of their food bar and a roll from their bakery, and thought to myself…this would make a pretty good soup.

So I threw one together and it came out pretty good. Actually, it came out great.

Next time I’ll slice a few sausages up for the fun of fishing them out. Continue reading
