Split Pea soup is every bit as rich as Tomato, but offers a totally different palette, both of flavors and colors. I loved this poor-man's soup as a child, a fondness that only deepened when I discovered it in fancy dress as Potage Saint-Germain as an adult, preferably with a dash of sherry.
