The nice thing about this one is that it&#8217;s fast, as well as tasty.<\/p>\n<p>All in all, this came out pretty well&#8230;but I didn&#8217;t get it as creamy as I&#8217;d like, and using canned crabmeat just isn&#8217;t worth it. Not that it kept us from going back for seconds (or thirds), but it didn&#8217;t live up to my hopes. I&#8217;ll have to try again when I can get some fresh, or even frozen crab. That, and I&#8217;ll increase the amount of half and half, decrease the stock, and actually use all the flour I put in the recipe.<!--more--><\/p>\n<div id=\"attachment_327\" style=\"width: 410px\" class=\"wp-caption aligncenter\"><a href=\"http:\/\/www.flickr.com\/photos\/elilley\/sets\/72157625468670251\/show\/\" target=\"_blank\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-327\" class=\"size-full wp-image-327  \" title=\"Untitled-2\" src=\"https:\/\/e357.net\/beingernest\/wp-content\/uploads\/2010\/12\/Untitled-2.jpg\" alt=\"\" width=\"400\" height=\"134\" srcset=\"https:\/\/e357.net\/beingernest\/wp-content\/uploads\/2010\/12\/Untitled-2.jpg 500w, https:\/\/e357.net\/beingernest\/wp-content\/uploads\/2010\/12\/Untitled-2-300x100.jpg 300w\" sizes=\"auto, (max-width: 400px) 100vw, 400px\" \/><\/a><p id=\"caption-attachment-327\" class=\"wp-caption-text\">click on image for slide show<\/p><\/div>\n<p style=\"text-align: center;\">\n<p>2 tablespoons butter<br \/>\n1 tablespoon vegetable oil<br \/>\n2 slices bacon<br \/>\n1 medium onion, chopped (about 1 cup)<br \/>\n3\u00a0 cups\u00a0 diced red potato (1\/2 inch cubes)<br \/>\n3-4 ribs celery, chopped (about 2 cup)<br \/>\n1\/2 cup chopped red bell pepper<br \/>\n4 teaspoons OLD BAY\u00ae Seasoning<br \/>\nor<br \/>\n4 teaspoons Zatarans\u00ae Creole Seasoning<br \/>\n1\/4 teaspoon cayenne pepper<br \/>\n1 Bay Leaf<br \/>\n1 quart chicken broth<br \/>\n1 pt fat free half and half<br \/>\n1\/4 cup flour (I use Wondra\u00ae flour and thicken as required)<br \/>\n4 cups fresh or frozen corn kernels<br \/>\n12 ounces lump crabmeat<\/p>\n<p>Directions:<\/p>\n<p>Cook bacon until crispy. Remove and crumble when cool.<br \/>\nSaute onion, and red pepper until potatoes are tender.<br \/>\nAdd potatoes and spices and saute three minutes.<br \/>\nStir in milk and chicken broth.<br \/>\nBring to boil. reduce to a simmer.<br \/>\nCook until potatoes are tender.<br \/>\nAdd corn and crabmeat.<br \/>\nReduce heat to low; bring to a simmer<br \/>\nAdjust salt<br \/>\nAdd flour to thicken to desired consistency.<br \/>\nSimmer for 5 minutes.<br \/>\nRemove and discard bay leaf.<\/p>\n<p>Serve with oyster crackers<\/p>\n","protected":false},"excerpt":{"rendered":"<p>This Sunday&#8217;s soup: Corn and Crab Chowder.
