Terrific hit. My only additions were to double the Texas Pete&#8217;s, and to precook the chicken until it was almost done in the microwave, then just brown it on the grill. Much juicer, and a lot fewer flames to deal with.<\/p>\n<ul>\n<li><a href=\"http:\/\/www.e357.net\/beingernest\/wp-content\/uploads\/2013\/06\/IMAG0054.jpg\"><img decoding=\"async\" class=\"alignright  wp-image-3115\" alt=\"IMAG0054\" src=\"http:\/\/www.e357.net\/beingernest\/wp-content\/uploads\/2013\/06\/IMAG0054-579x1024.jpg\" width=\"300\" srcset=\"https:\/\/e357.net\/beingernest\/wp-content\/uploads\/2013\/06\/IMAG0054-579x1024.jpg 579w, https:\/\/e357.net\/beingernest\/wp-content\/uploads\/2013\/06\/IMAG0054-169x300.jpg 169w, https:\/\/e357.net\/beingernest\/wp-content\/uploads\/2013\/06\/IMAG0054.jpg 1520w\" sizes=\"(max-width: 579px) 100vw, 579px\" \/><\/a>SALSA INGREDIENTS:<\/li>\n<li>1 lime, zest and juice<\/li>\n<li>5 roma tomatoes, diced<\/li>\n<li>1\/2 red onion, chopped<\/li>\n<li>1\/4 piece habanero pepper, minced<\/li>\n<li>2 ears corn, kernels removed<\/li>\n<li>2 tbsp. extra virgin olive oil<\/li>\n<li>3 tbsp. parsley, chopped<\/li>\n<li>3 tbsp. chives, chopped<\/li>\n<li>3 tbsp. cilantro, chopped<\/li>\n<li>4 tbsp. Texas Pete<sup>\u00ae<\/sup> Chipotle Hot Sauce<\/li>\n<li>2 tbsp. Texas Pete<sup>\u00ae<\/sup> Original Hot Sauce<\/li>\n<li>Salt and pepper to taste<\/li>\n<\/ul>\n<ul>\n<li>CHICKEN INGREDIENTS:<\/li>\n<li>1 whole chicken, quartered<\/li>\n<li>1\/2 cup extra virgin olive oil<\/li>\n<li>4 tbsp. thyme, chopped<\/li>\n<li>Salt and pepper to taste<\/li>\n<\/ul>\n<ul>\n<li>SALSA PREPARATION:<\/li>\n<li>Combine all ingredients &amp; gently fold together. Allow flavors to infuse for 45 minutes to an hour.<\/li>\n<\/ul>\n<ul>\n<li>CHICKEN PREPARATION:<\/li>\n<li>Drizzle chicken quarters with oil and sprinkle with thyme, salt and pepper. Over medium high heat, grill chicken quarters 8-10 minutes on each side, or until internal temperature reaches 165\u00b0F.
