I actually used half sweet and half hot, but you can adjust it with cayenne<\/li>\n<li>2 lg green bell peppers, or 4 pepperone (skinny sweet Italian green peppers)<\/li>\n<li>1 lg red pepper<\/li>\n<li>1 md fennel bulb<\/li>\n<li>1 qt chicken stock<\/li>\n<li>2 cloves garlic<\/li>\n<li>10 oz can diced tomatoes<\/li>\n<li>6 oz can tomato paste<\/li>\n<li>1cup pasta ( I like tricolor bow ties) cooked al dente and drained<\/li>\n<\/ul>\n<p>1 tsp each:<\/p>\n<ul>\n<li>Salt<\/li>\n<li>Oregano<\/li>\n<li>Basil<\/li>\n<li>Anise seeds<\/li>\n<\/ul>\n<p>Break up the sausage, brown in skillet. Remove. Put in soup pot.<br \/>\nChop the vegetables to the size you like. I&#8217;m like them big enough to see. 1\/2 &#8211; 1 inch square.<br \/>\nUse the pan you browned the sausage in to saute the vegetables so it gets deglazed.<br \/>\nAdd a bit of olive oil as you move the vegetables through for saute (you&#8217;ll take the oil off the top at the end)<br \/>\nSaut\u00e9 the onions and peppers over medium heat until slightly soft.<br \/>\nChop garlic, saut\u00e9<br \/>\nAdd onion, peppers, and garlic to soup.<\/p>\n<p>Add stock, diced tomatoes, and tomato paste.<br \/>\nAdd a level tsp of salt (we will season to taste later)<br \/>\nAdd oregano, basil, and anise seeds<\/p>\n<p>Bring soup to a simmer<br \/>\nAdd water to make a soupy consistency. Less is better, as we can add more. Basically you just want it to be able to heat evenly and not burn.<\/p>\n<p>Cook 45 minutes.<\/p>\n<p>Add fennel after 20 min.\u00a0 (You want it to retain some body, though be thoroughly cooked through.)<\/p>\n<p>Add water if it&#8217;s too thick.<br \/>\nSalt to taste<br \/>\nWant it spicy? Add cayenne to taste.<br \/>\nSkim oil off the top. I use gravy a strainer.<br \/>\nAdd in the pasta.
